We just had our last baking lesson with Mrs. Mc Leod and we made lovely Lemon drizzle Cake. We had to pour a sugary lemon syrup on top of the cake when it came out of the oven. It was really tasty and had a lovely crunchy sugary top.
It was easy to make so here’s the recipe if you would like to try it at home:
2 lemons, zest grated
175g granulated sugar
175g butter
200g self-raising flour
1/2 tsp baking powder
3 eggs
Mix the lemon zest with the sugar, butter, flour, baking powder and eggs until smooth.
Spoon the batter into a lined tin.
Bake in the oven at 180 dregees for 35 minutes or until baked through (a knife comes out of the middle clean) .
Squeeze one of the lemons and mix the juice with 100g granulated sugar. Mix well. When the cake comes out of the oven pierce holes in the top with a fork and pour over the syrup. Leave to cool in the tin.
Slice when cool and enjoy:-)
